  • 1 eggplant/ brinjal
  • 10 gm parsley
  • 10 gm basil
  • 30 gm garlic
  • 5 gm black pepper
  • 150 gm ricotta cheese
  • 30 gm walnuts
  • 350 gm tomato
  • 80 gm onion
  • 30 gm parmesan cheese
  • How to make Eggplant Roulade (Steps)
  • Cut thin slices of eggplant and grill. Make a purée of half the eggplant and mix with ricotta, parsley, walnuts, basil and season. Place the mixture on the grilled eggplant slices and roll.
