1 eggplant/ brinjal
10 gm parsley
10 gm basil
30 gm garlic
5 gm black pepper
150 gm ricotta cheese
30 gm walnuts
350 gm tomato
80 gm onion
30 gm parmesan cheese
How to make Eggplant Roulade (Steps)
Cut thin slices of eggplant and grill. Make a purée of half the eggplant and mix with ricotta, parsley, walnuts, basil and season. Place the mixture on the grilled eggplant slices and roll.
For the sauce, heat olive oil in a pan on medium flame. In olive oil, add black peppercorns, add onion, garlic and sauté. Add tomatoes and make a sauce.
